Charcuterie Class - Metcalfe Road, Matakohe, Kaipara
We would like to introduce you to the world of Charcuterie, the original 'slow food'. Charcuterie is the branch of cooking devoted to prepared meat products, such as bacon, sausage, salami, dry cured meat, primarily from pork. Come and learn the skills needed to start your own journey into the world of these tasty artisan products. All the pork used in our classes is free farmed and we do not use any artificial additives or preservatives.
Classes are on Saturdays during Winter and run from 10am - 4pm with a charcuterie platter and beverages provided for lunch. Class dates will be advertised from March each year.
Meatatarian, May - September Classes
Dry Cured Bacon, One Whole Muscle Meat, Sausages & Salami.
This is a full day, hands on class where you will be taught the process of curing a whole muscle cut of meat and put this into practice by making your own dry cured bacon as well as one other cut of meat. This will be followed by salami making as a class.
We will then stop to enjoy a charcuterie platter for lunch, accompanied by a beer or glass of wine, before we go back to the kitchen and make sausages. You will do the entire process yourself, from grinding the meat to linking the finished sausages.

One Dry Cured Charcuterie cut to age in your own fridge
All of the sausages that you make (approx. 10)
A pack of pre-made salami & a casing pack to make your own salami at home
Full course notes with additional tried and tested recipes
Terms & Conditions of Booking
All class bookings must be made via our online store on a first come first served basis. There are minimum class sizes & we may need to move you to a different date to meet this requirement, so please note this when purchasing. If you want to guarantee your class date goes ahead then just bring three mates! When you have purchased a class you will receive a confirmation email (please check your junk mail if it doesn’t appear in your inbox within 10 minutes), this is your virtual ‘ticket’. However you don’t need to bring it with you, as your name will be your place holder for the booked class. You will be sent an email a few days prior to the class date with further details of how to get to the location and what to bring with you on the day.
Booking & cancellation policy is as follows:
We reserve the right to cancel/postpone classes in the event of not enough attendees booked, and will issue a full refund or a credit note for an alternative date.
Cancellations must be made via email, and if received no less than seven days prior to the class date, a full refund will be given. Cancellations received between three to six days prior to the class date will receive a fifty percent refund OR a credit note for an alternative date, whichever you choose.
No-shows or cancellations made less than three days prior to the class date will not be refunded, however you may send someone in your place.
